A2 Gir Cow Ghee is the treasure of nutrients, produced using pure A2 milk from the ancient Indian breed of cows. And nowadays A2 ghee is available in the markets. 

1. Made from pure Desi Cow Milk with Traditional Bilona Method:

A2 milk is extracted from desi cows that specifically produce A2 beta-casein protein, whose average yield is 5 to 6 liters of milk per day. As compared to regular cross-breed cows which yield around 15 to 20 liters of milk per day.

It takes around 30 liters of cow milk to prepare 1 liter of Desi Ghee. So the production cost increases. And as the yields of Indigenous cows is lower as compared to more common dairy breeds, their milk and milk products are expensive.

The cost of the many Desi Ghee available in the market depends on the Purity. Adulterants such as Vegetable oil / Vanaspati , Animal fats, Hydrogenated oils, etc. are added to increase the volume and reduce the cost of the product for their economic advantage.

There is a misconception that consuming ghee leads to negative health impact, but you should note that consumption of adulterated market ghee leads to health problems such as obesity, allergies and heart diseases. When you eat these adulterants through the adulterated ghee, you get surrounded by all sorts of health problems.

Traditional Bilona method:

Step 1: Boiling Gir cow A2 Milk

First milk is collected from cows and the milk is boiled.

Step 2: Curdling of milk

To convert the milk into curd, a spoonful of curd starter called jamawan is added to it. Overnight the milk turns into curd.

Step 3: Churning of Curd

The bilona turns back and forth in order to churn the curd clockwise and anti-clockwise so as to make butter.

Step 4: Separation butter and buttermilk

The butter is separated from buttermilk and floats on the top which is also known as loni or makkhan. This buttermilk left behind is a delicious drink and can be consumed in various styles.

Step 5: Heating the butter

The butter is now put in a pot and heated on a medium-high flame. During this process, all the water evaporates. Once the butter becomes clear and we can see a visible layer of milk solids at the bottom the ghee is ready.

The Bilona ghee method essentially requires heating on a low flame and the clarification process is long. In the end, the milk solids turn reddish brown and settle at the bottom. Clear bilona ghee is afloat above.

Ghee, a flavorful and aromatic golden liquid utilized in Indian culture from antiquity, because of its nutritional attributes and characteristic flavor and aroma, and is considered as a sacred food. It has been considered immensely superior to other fats. And as a human food, it has been universally accepted.
